Duck Leg Confit (GF)

Celeriac and Cauliflower puree, pomegranate reduction, and crispy brussels sprouts

Braised Colorado Lamb Shank (GF, DF)

Roasted fingerling potatoes, honey-glazed carrots, and pan jus

Stuffed Acorn Squash (GF, V, DFO)

Stuffed with sautéed onions, garlic, quinoa and lentils. Topped with feta cheese, avocado, pepitas on a Basque Piperade sauce. Vegan option available upon request
